Dough ingredients

  • 1 cup gluten-free flour
  • 1/2 C hazelnut flour
  • 1/3 C coconut oil melted
  • 1/4 C olive oil
  • 3 tbsp cold water
  • 1/4 tsp pink Himalayan salt

Almond filling ingredients:

  • 2/3 C melted coconut oil
  • 1/2 C almond butter
  • 1 C blanched almond flour
  • 6 Medjool dates + 1/3 C hot water (let them sit in water for 10 min while doing the dough)
  • 1/2 tsp vanilla beans
  • 1/2 C sliced almonds + extra for toppings

Steps:

 

  1. Prepare the dough
    In a bowl, mix all dough ingredients using a spatula until a cohesive dough forms, or pulse everything in a food processor for a few seconds.
  2. Shape the crust
    Place the dough between two sheets of parchment paper and gently press or roll it out. Transfer it into an 8-inch pie mold, pressing evenly along the bottom and sides.
  3. Blind bake
    Preheat the oven to 350°F (175°C). Blind bake the crust for 12 minutes, until lightly set.
  4. Prepare the almond filling
    While the crust is baking, add all the almond filling ingredients to a bowl and mix by hand until smooth and well combined.
  5. Fill the tart
    Remove the crust from the oven and evenly spread the almond filling over the pre-baked shell.
  6. Add toppings
    Sprinkle sliced almonds or your desired toppings evenly over the filling.
  7. Final bake
    Return the tart to the oven and bake for 20 minutes at 350°F, until golden.
  8. Cool & serve

    Allow to cool for 5-10 minutes, then slice and enjoy this beautifully nourishing, guilt-free dessert.
